1 cup plus 3 tablespoons sugar. divided
In small bowl, combine 3 tablespoons sugar and the cinnamon. Set aside. In medium bowl, mix all remaining ingredients.
In skillet, over medium-high heat, melt butter. As you would making pancakes, pour mixture into about twelve 1/2" thick patties in skillet. Fry patties 1 minute on each side, until browned, taking care not to burn. If necessary, add more butter. Immediately roll in cinnamon and sugar and serve.
