1/3 cup matzo meal
1/2 cup water
4 eggs, separated
1 tbsp. sugar
Salt
Butter and oil for frying
Mix the matzo meal and water in a bowl big enough to mix the recipe. Cover a refrigerate at least 1 hour or even overnight.
Add the yolks, salt, and sugar and mix with a spoon.
Beat the whites to stiff but not dry. Gently fold them into the matzo meal mixture. Drop the mixture by large spoonfuls into hot oil and butter, but do not spread. Brown slowly on both sides so that the insides can cook.
Serve with honey, jam, cinnamon and sugar, or KLP syrup.
