Pancakes, Matzo Meal I (D/P, KLP)

Serves: 4

1/2 cup matzo meal
salt
1 teaspoon sugar
3 eggs, separated
3/4 cup water or milk
cinnamon, optional

Mix dry ingredients. Beat egg yolks and add water.

Combine the 2 mixtures. Let stand 15 minutes, then fold in stiffly beaten egg whites. Drop by spoonfuls on a well-greased griddle. Brown on one side, turn and brown on the other. (Pat down during the cooking; if the latkes are too thick, the centers won't cook.)
