6 eggs
Soak matzo in water for 3-4 minutes, until soft. Drain thoroughly. Beat eggs in a large bowl, add salt and pepper, if desired. Stir matzo into egg mixture.
Heat margarine in a large skillet. Sauté chopped scallions. Add mushrooms and cook until soft.
Pour egg mixture into skillet and brown on one side. Shake skillet to prevent from sticking. Turn on other side and brown.
