Fluden, Shofar's (D)

Serves: 10-12

3 cups flour
1 cup butter
1 cup sugar
2 eggs
1 tbsp. water
1/4 cup red raspberry jam
1 cup chopped dates
1 cup chopped walnuts
1 tsp. allspice
1 tbsp. orange juice
1/4 cup apricot jam
3 medium apples (peeled and sliced)
1/3 cup brown sugar
juice of one lemon

Combine flour, butter and sugar in a bowl. Add eggs and water and mix to make dough.

Use 1/3 of the dough to cover bottom and sides of a well-greased 11"x7"x3" pan. Spread raspberry jam, chopped dates, and chopped walnuts on the layer of dough. Sprinkle with allspice and orange juice.

Cover with another 1/3 of the dough and spread apricot jam, sliced apples, brown sugar, and the juice of one lemon on this layer.

Cover with remaining 1/3 dough, brush with egg white, and sprinkle with sugar. Bake at 300-325ºF for 1-1/2 hours.
