1 tablespoon butter
Cream 1 tablespoon butter (unmelted) and 1 tablespoon sugar. sift flour, baking powder and salt together. Add to creamed mixture and mix until crumbly. Add half the eggs, and mix thoroughly.
Spread in 8" square pan. Cover with pineapple. Mix one cup of sugar, melted butter and coconut; add remaining eggs and blend well. Spread over top of pineapple.
Bake in moderate oven at 350°F for 30 to 35 minutes. Cut into squares.

This is another of my mom's recipes. It, too, was published years ago in the Beth Am Temple cookbook. They are easy to make.
