Apple Auflauf (P)
Source: "Lillian Kaplun's Kitchen"
Serves: 8

Apple Filling:
4 to 6 cooking apples, peeled and sliced
1/2 cup raisins
1/2 cup white or brown sugar
2 tbsp. lemon juice
Rind of one lemon (optional)

Batter:
1/2 cup sifted flour
1/2 tsp. baking powder
Dash of salt
2 eggs
1/2 cup sugar
1/2 tsp. vanilla
1-1/2 tbsp. cold water

Make Filling:
To prepare the apple filling, mix together all the ingredients in a large bowl. Blend well. Pour into a well-greased 8" square baking dish. Cover with foil and bake at 375°F (?) for 15 minutes. Place on a cake rack and remove foil.

Make Batter and Assembly:
Meanwhile, prepare batter. Sift together flour, baking powder, and salt. Beat eggs; add sugar gradually and beat until light and lemon-colored. Add vanilla and water. Fold in dry ingredients.

Pour over baked apple filling and bake at 375°F (?) for 25 minutes.

Poster's Notes:
I found a recipe I wanted to try for an apple dessert in a cookbook by Lillian Kaplun. It is called "Auf Lauf" with apples. I am not sure what it means. I am trying to figure it out. I am thinking of holes or maybe light or is that lof (sp) LOL! I wish I could call up my mom or grandma, they would have known. Thanks so much, and Happy New Year to all.

Eliane Driessen says: Auflauf is an oven dish. It can also be with veggies, or cheese, fish, not necessarily with fruits.
