3 tbsp. olive oil
Heat the oil in a large frying pan.
Add the onion and cook for 5 minutes, then add the carrots and sausage. Cook, stirring often, for about 10 minutes, until the pieces of sausage are browned in parts and the carrots are lightly cooked. Add seasoning to taste.
Add the margarine to the carrot and sausage mixture, toss the lot into the drained spaghetti and serve at once.

1 onion, halved and thinly sliced
8 oz. carrots, coarsely grated
1 lb. smoked beef sausage, cut into strips
salt and freshly ground black pepper
1 lb. spaghetti
2 oz. margarine
I also added fresh garlic chopped finely and didn't bother with the salt. Next time I would make more of the sausage-carrot mix. It tasted good, but we didn't feel that it was enough for the amount of spaghetti.
