Ramen w/Tofu and Sesame (P, TNT)

Serves: 4

3/4 cup peanut butter
1-1/4 cup hot water
3 tablespoons cider vinegar
1-1/2 to 2 tablespoons tamari sauce
3/4 cup sesame seeds, toasted
4-1/2 tablespoons Chinese sesame oil
1/2 tsp. hot red pepper, crushed
1/2 pound tofu, cut into small chunks
2 packages ramen noodles
1 medium cucumber
4 scallions, finely minced
3/4 cup cashews, finely chopped

In a medium-sized saucepan, combine the peanut butter and the hot water, stirring with a whisk until they form a smooth mixture.

Add the vinegar, tamari, sesame seeds, sesame oil, crushed red pepper (or cayenne), and tofu chunks. Stir until blended. Set aside.

Open your package of ramen noodles, discover the enclosed tiny envelope of "flavor mix," and throw it away in the garbage. Set the noodles aside.

Begin boiling about a quart and a half of water in a large saucepan.

Take the medium cucumber, peel if necessary (i.e. if it's waxed) and cut it lengthwise down the center. Remove and discard the seeds. Slice the cucumber into very thin strips.

Heat the peanut sauce over a low flame, and add the noodles to the boiling water. Boil them for 3 minutes only, and then drain very well and mix with sauce.

Top with scallions and strips of cucumber, minced scallion, and chopped nuts.
