Pasta w/Red Pepper Sauce (P, TNT)

Serves: 4

1/2 cup onion, diced
3 red peppers, diced
1 clove garlic, minced
1 tsp. oil
1.25 cups vegetable stock
1/2 tsp. red pepper flakes (the hot ones)
1 tsp. salt
1/4 tsp. thyme
1/4 cup parsley
zest from 1 lemon
1/2 lb. cooked linguini

In a 2-quart microwavable dish, put oil, onion, and garlic. Cook for 5 minutes.

Add pepper, and cook for another 5 minutes.

Add stock, pepper flakes, salt, and thyme. Cook on high for 10 minutes.

Pour mixture into blender, along with parsley and lemon zest and process until smooth.

Pour over pasta and serve.

Serving suggestion: Sprinkle liberally with grated cheese and serve with tomato and fresh mozzarella salad.

Poster's Notes:
This one came from my deceased supervisor, a man who loved to cook, and did it well. All cooking is done in the microwave, including the pasta if you are a masochist.
