2 cups macaroni
Preheat oven to 350°.
Cook macaroni according to package directions, drain and set aside.
In pot, brown onion in hot oil. Add broccoli and celery. Cook 2 minutes.
Mix in cooked macaroni and remaining ingredients (except for cheese).
Transfer to a casserole dish, sprinkle with cheese. Bake 30 minutes. Broil a few minutes at the end to brown the cheese.

2 tbsp. vegetable oil
1 onion, chopped
1-1/2 cups broccoli florets
2 stalks celery, chopped
1/2 cup tomato juice
2 cups medium (or hot) salsa
Salt and pepper to taste
3/4 cup EACH grated Mozzarella and old Cheddar
Very easy to prepare. Made it for supper last night and the girls loved it.
