Macaroni and Cheese, Baked I (D, TNT)
Source: my sister Bea (who thinks she heard it on CBC radio many years ago)
Serves: 8 large

2-1/2 cups uncooked macaroni

Sauce:
4 tablespoons butter
4 tablespoons flour
1 tsp. salt
1 tsp. sugar
1/2 pound (250g) process cheese, cubed
2/3 cup sour cream or plain yogurt
1-1/3 cup cottage cheese

Topping:
2 cups shredded cheddar cheese (the older the better)
1-1/2 cups fine soft bread crumbs
3 tablespoons butter

Cook macaroni in boiling, salted water.

For the sauce, make a roux of the butter, flour, salt and sugar. Add sour cream and cottage cheese and cook until cottage cheese sort of melts. Add the cubed process cheese.

Add sauce to the macaroni, mix well and place in greased jellyroll pan or 9"x13" pan. Sprinkle with bread crumbs, then cheese. Dot with butter. Bake at 350°F for 45 to 50 minutes (longer for the 9"x13" pan).

Poster's Notes:
I like the top and bottom crispy, so I bake it in a jellyroll pan. You could also bake it in a 9"x13" pan for a softer texture.

I have frozen the leftovers and they reheat quite well in the oven (wrapped in foil). It doesn't reheat very well in the microwave IMHO.
