1 lb. lo mein noodles
Fill a 4-.or 5-quart pot about three-quarters full with water. Bring to boil and cook the lo mien, stirring often, until the noodles are tender. Drain in colander and rinse in cold water. Then return the lo mien to pot. Mix the noodles with the sesame oil and set the pot over a low heat to keep warm while sauce is prepared.
In a wok or 10" to 12" skillet, heat the peanut oil until it just begins to smoke. Corn or other vegetable oil can be used. Add the onions and garlic and stir fry until the onions soften and some of them are beginning to crisp. Add the ground beef, stirring constantly until the beef is cooked. Break up any large chunks of ground beef. Blend in the soy sauce and water chestnuts.
Toss the noodles with the sauce. Transfer to a large platter and garnish with the scallions.
Variation: Add 1/2 lb. sliced fresh mushrooms after the onions are crisp, stirring for half a minute before adding the beef.
