Egg Barley Casserole, Mushroom-Vegetable (M, TNT)

1 8-oz. box egg barley (farfel)
1 small onion, diced
1 stalk celery, diced
1 sweet red pepper (or green pepper), diced
1/2 lb. mushrooms, sliced
1 cup chicken broth
1/4 tsp. pepper
Salt

Sauté vegetables in minimum amount of fat (or in broth in microwave) until tender.

Cook egg barley/farfel as directed.

When vegetables are tender, add chicken broth and simmer a few minutes. Add cooked pasta, salt and pepper, Mixture should be loose.

Place in greased baking dish. Bake 1/2 hour, covered, at 350°F.
