1 medium tomato, chopped in large chunks
Heat oil in skillet; add vegetables/onions and garlic and sauté until just cooked, but still crisp.
Sprinkle salt, add pepper; mix well. Add the balsamic vinegar and simmer about 2 minutes.
Remove from heat and pour over pasta of your choice (great over angel hair!). Top generously with feta cheese.
