1/2 cup kosher salt
1/2 cup brown sugar
4 tbsp. pickling spice mix
2 tsp. coarse ground black pepper
4 to 6 crushed bay leaves
1 onion cut into quarters
6 to 8 cloves of garlic
In my experience it pays to experiment. I smoked up 6 sides of salmon using this marinade for my daughter's bat mitzvah last spring. Though there was plenty of other good food on hand, the crowd zeroed in on these suckers. Hardly any leftovers at all!
