Sauce:
2 tsp. salt
1/4 tsp. pepper
1 tsp. paprika
1 tsp. dry mustard
1 tbsp. soy sauce
1/2 cup ketchup
1/2 cup water
1/4 cup cider vinegar
1/2 cup minced onion
2 cloves garlic
Sauce is prepared in the blender.
I baked the riblets in the oven covered in foil for 1 hour. Then I poured off the fat and left them uncovered for a further 5 minutes or so and again poured off any remaining fat (there wasn't much left.).
Then I poured over the sauce and baked, uncovered, for another 40 minutes, turning the riblets over after 20 minutes.
