2 racks lamb ribs, well trimmed
Cut part way down between ribs. Marinate 1-6 hours in mixture of the other ingredients.
Place on rack in a pan with water in the bottom. Bake at 350°F, about 50 minutes, turning and basting halfway through.
Remove liquid from pan and raise temperature to 450°F Bake 15 minutes, or until well browned. Cut in pieces and serve.
They can also be made on a barbecue grill, but cook them slowly.

3 tablespoons soy sauce
2 tablespoons sherry or dry white wine
5 tablespoons hoisin sauce
1/4 teaspoon five-spice powder
1 tablespoon honey
These were a family favorite when we lived in the U.S. I don't make them here (in Israel) because of the usual unavailability, and the exorbitant price when I do find them, of the ribs.
