Lamb Shanks, Roasted II (M, TNT)

Serves: 3

3 shanks, fat trimmed and washed
Salt
Pepper
Flour
Olive oil
4 cloves garlic, chopped
Mushrooms, sliced
1 cup sweet red wine
2 cups chicken or beef broth
Cooked white rice

Preheat oven to 350°F.

Sprinkle shanks with a little salt and pepper; dredge in flour.

Fry in oven-safe pan with cover on all sides to brown. Add mushrooms, then wine and broth. Cover and bring to a boil.

Roast at 350°F for 90 minutes, or until meat is tender. Turn shanks over at half time.

Remove shanks and cool the sauce to get the fat off. Can thicken the sauce with some flour before heating up.

Serve on white rice.
