Lamb Shanks, Roasted I (M, TNT)

Serves: One shank per person, make as many as desired

Lamb shanks
Lemon juice
Garlic
Freshly ground pepper
Sliced onion
Salt (optional)

Rub the shanks with the lemon juice. Insert slivers of garlic into slits you make in the meat. Rub with garlic and pepper and salt, if used. Marinate in fridge overnight (or less if in a hurry) surrounded with sliced onions. Cover well or the fridge will stink!

Heat oven to 400-450°F. Put shanks into oven UNCOVERED in a pan.

Cook from 1/2 hour to 1 hour depending on how you like your lamb. I do like high heat roasting. You can certainly use another method if you prefer.

Serve with oven roasted potatoes and enjoy.

Poster's Notes:
Rub the shanks with soy sauce if you would like. Salty but tasty.
