1 large sweet potato (about 1 pound), peeled and grated
Preheat the oven to 375°F.
In a bowl, mix all the ingredients thoroughly, but don't squeeze themixture or you will extract moisture, and the end product will be soggy.
Pour into a greased 10" round cake pan or tube pan. Bake for 1 hour or until a knife inserted in the center comes out clean. Cut into slices. Serve warm.

1 cup canned unsweetened crushed pineapple with its juice
One 1" piece fresh ginger, peeled and grated
1 cup pitted prunes, coarsely chopped
1 teaspoon ground cinnamon
3 eggs
1 cup flour
1/2 cup olive oil
1/4 cup light brown sugar
3 tablespoons rum or brandy
Salt and pepper
