4 sweet potatoes
Peel and cut into small pieces both carrots and sweet potato. Boil together.
When they test soft, drain off into a colander and place the hot vegetables back into the pot.
Mash with potato masher and add brown sugar, beaten eggs, and can crushed pineapple.
Mix well and bake in a 9"x13" pan. If you want the top a little sweeter sprinkle with brown sugar. Serve as a side dish to meat or chicken.

For years now I make a tzimmes for the high holidays that some won't say is a tzimmes but it gets rave reviews every year. On Pesach I make the same thing using white sugar and fresh pineapple.
