2 large sweet potatoes (yams), shredded in food processor
Mix all ingredients together. Place into greased baking pan(s).
Bake 1 hour at 350°F.

1 cup brown sugar, packed
4 eggs
2 tbsp. pumpkin pie spice
1/2 tsp. salt, or to taste
I use two small rectangular pans (similar to what comes in some of the KLP cake mixes).
