1-1/2 pounds pumpkins, peeled and coarsely shredded
Shred coarsely the pumpkins and potatoes in the food processor.
In a big bowl mix well with all the ingredients.
Butter or spray with Pam a rectangle 20cmx26cm Pyrex dish, and scoop potato mixture into it.
Cover with aluminum foil and bake in a pre heated 350°F (180°C) hot oven for 30 minutes. Remove foil and continue to bake for another 35 to 45 minutes more.
Cool for 10 minutes and serve hot. Keeps well in the fridge, warm it up in the microwave before serving.

1/2 cup ground oats (grind in the food processor)
1/3 cup brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg, freshly ground
1/8 tsp. allspice
1/8 tsp. freshly ground pepper
1/2 tsp. salt
1/4 cup melted margarine
2 eggs
I like to serve it as a side dish.
