1 12-oz. package thin or medium noodles
Boil and drain noodles. When noodles are in strainer run cold water over them to prevent sticking and clumping.
In a bowl, beat the eggs, vanilla or vanilla sugar, and sugar with a whisk, add pineapple and stir well, add noodles and stir well. Grease or spray 9"x13" pan and add noodle mixture.
Bake at 350°F for 45 minutes to an hour. Kugel is done when the top is golden brown.

1 can crushed pineapple
2 tsp. vanilla sugar, or 1 tsp. vanilla extract
Every Succot I make this sweet Kugel that tastes good hot or at room temperature. My kids nosh on it cold from the fridge.
