Noodle Kugel, Pineapple III (P, TNT)

Serves: 9

8 oz. medium noodles
2 tbsp. margarine, melted
6 eggs, beaten
3/4 cup sugar
1 tsp. lemon juice
1/4 tsp. salt
1 can pineapple slices
1 cup pineapple juice, drained from can (add water to make 1 cup if needed)
Maraschino cherries
1/2 cup brown sugar

In 4-quart pot of boiling water cook noodles until soft, 12 to 15 minutes. Rinse and drain. Set aside to cool, 15 minutes.

In a large bowl combing noodles, margarine, eggs, sugar, lemon juice, salt and pineapple juice.

Preheat oven to 350°F.

In a well-greased 9" square pan, place three rows of three pineapple slices each. Put a maraschino cherry in the center of each slice and sprinkle with brown sugar. Pour noodle mixture over pineapple and bake 40 minutes. Cool in pan.

Turn onto plate to serve.
