Noodle Kugel, Apricot I (D, TNT)

Serves: 12

Topping:
3 cups corn flakes, measure first then crush in food processor
1 tsp. cinnamon
3/4 cup sugar
3/4 stick butter, melted

Kugel:
8 oz. medium noodles
3/4 stick butter, melted
3 oz. cream cheese
1/2 cup sugar
3 eggs, beaten
1 cup milk
1 can apricot halves - or more (top 1 per piece), drained
2 oz. apricot nectar

Make Topping:
Mix all ingredients together; set aside for later)

Make Kugel:
Cook noodles, drain.

Toss noodles with melted butter and put into a greased pyrex dish (about 13"x9"x2").

Cream the cream cheese with sugar; then add beaten eggs and mix together. Pour this mixture over noodles. Pour milk over noodles.

Place apricots on noodles. Pour apricot nectar over noodles.

Put topping over top. Bake at 350°F for 1 hour and 15 minutes.

Poster's Notes:
Here are two fabulous kugel recipes. The Chocolate Chip one (click here for recipe) one came from my sister but I think it originally came from this list. The apricot one is my cousin's. The chocolate chip one is low in fat (except, of course, for the chocolate!). The apricot one can be lower in fat than the stated recipe, I'm sure; but I've never tried it. I would think that you could use skim milk, less butter, and low-fat cream cheese. This kugel may be made weeks in advance and frozen.
