Noodle Kugel, Apple-Raisin I (D, TNT)

Serves: 12

1 tsp. cinnamon
3 quart boiling water (1 tbsp. salt in boiling water)
1 8-oz. package wide noodles (4 cups)
1/4 cup butter or margarine, melted
2 eggs, beaten
2 tbsp. lemon juice
1-1/2 tsp. lemon rind, grated
1/2 cup raisins
3 thinly sliced apples (small can crushed pineapple may be substituted)
1 tsp. vanilla
1/2 cup walnuts, chopped
1 8-oz. package cream cheese
1/2 cup sour cream
1 tbsp. flour
3/4 cup sugar
Optional: whipped cream or sour cream to top

Cook the noodles and drain.

Mix the cream cheese, cinnamon, flour, and sugar. Add beaten eggs and melted butter or margarine. Add the rest of the ingredients and mix well.

Turn into 2-1/2 quart greased casserole. Bake 1 hour at 375°F until light brown on top. Serve warm with whipped cream or sour cream.
