Noodle Kugel, Apple w/Lemon Sauce (Charlotte) (D, TNT)

Yield: 1 9"x13" pan

[Archivist's Note: "Charlotte" can be a similar pronounciation of the Hungarian "schalat/schalet")

Kugel:
16 ounces of broad noodles
1 cup sugar
1 thin cut Macintosh apple
3 eggs, separated
Butter for pan

Lemon Sauce:
1 cup sugar
1 lemon
2 tbsp cornstarch
2 cups water
2 tablespoons butter

Make Kugel:
Cook noodles for 10 minutes and drain.

Into cooked drained noodles mix 1 cup of sugar and the apple. Beat egg whites until stiff and mix all ingredients together. Turn out into a well buttered baking dish 9"x13", to prevent sticking.

Bake at 375°F about 1 hour or until tan or it comes away from the side of the pan. Let it sit to cool.

Make Sauce and Assembly:
Meanwhile make lemon sauce. For the sauce, mix 1 cup sugar with lemon rind that you have grated.

Squeeze lemon for juice. Mix into sugar mixture; add cornstarch.

Boil 2 cups of water and add gradually to lemon-sugar mixture.

Heat 2 tbsp. butter until it gets clear; then mix it in with lemon-sugar mixture. Add squeezed lemon juice last. Serve over noodle charlotte.

Poster's Notes:
Can be made for Passover by substituting matzo instead of noodles.
