Noodle Kugel, Apple (P, TNT)

Serves: 8 to 10

12 to 16 ounces extra wide or wide egg noodles
10 tbsp. margarine
4 eggs, beaten
1/2 cup sugar
1 tsp. cinnamon
1 tsp. vanilla
1/2 cup orange juice or soy milk
2 large apples, peeled and thinly sliced
Cinnamon sugar, for topping

Cook noodles al dente. Drain well. While cooking, grease a 9"x13" baking dish. Preheat oven to 350°F.

Mix margarine into noodles while hot. Add all other ingredients except apples. Mix well. Stir in apples.

Pour into the greased pan, dot with margarine and sprinkle with cinnamon sugar.

Bake for approximately 1 hour.

This is from a dear friend, and it is delicious. You can add extra apples; some like a corn flake topping.
