1 2-pound can crushed pineapple, in its own juice
Combine eggs, sugar, oil, and matzo meal in a large bowl and beat very well. After the mixture is light and fluffy, add pineapple and apples, juice included. Add dried fruits. This will make a loose batter.
Pour into an 11"x17" pan, bake at 350°F for about an hour, or until the kugel is brown and firm.
This can be served hot or cold, with or without toppings such as ice cream.
Poster's Notes:
For the oil, I use a little less; or try applesauce instead!
Someone I know puts coconut chutney on top!

3 peeled, grated large apples
8 large eggs, or equivalent egg substitute
2/3 cup sugar
1/2 cup oil
3/4 cup matzo meal
1 pound dried fruit of you choice (apricots, prunes, mixed)
I sometimes omit the apples.
