2 matzo boards, broken into pieces
In small bowl combine matzo pieces and water and set aside.
Preheat oven to 350°F.
In medium mixing bowl combine 1 tablespoon plus 1 teaspoon margarine with the sugar and, using electric mixer, beat until thoroughly combined; add egg yolks and continue beating until mixture is fluffy.
Add fruit, cinnamon, and soaked matzo and beat until well combined. In separate bowl, using clean beaters, beat egg whites with salt until stiff peaks form; gently fold whites into fruit mixture.
Grease four 6-ounce custard cups with 1/4 teaspoon margarine each; spoon 1/4 of batter into each cup and bake for 30 to 35 minutes (until lightly browned).
Let cool for 10 minutes, then loosen with a spatula and remove from custard cups to a rack to cool. Serve warm or at room temperature.
