Butternut Squash Kugel III (P, TNT)
Source: Passed around in my community
Yield: 1 8" square kugel

2 12-oz. boxes frozen winter squash
1 stick margarine, melted
1/2 cup sugar
1/2 cup flour
Pinch of cinnamon
3 eggs
1/2 cup pareve liquid coffee creamer
Pinch of salt

Defrost squash, and drain off as much liquid as possible. Mix with melted margarine. Add sugar, flour, and cinnamon.

In a small bowl, beat eggs with coffee creamer. Combine egg and squash mixtures. Add a pinch of salt put in greased 8"x8" pan.

Sprinkle with cinnamon. Bake uncovered for 1 hour at 350°F.
