375g zucchini (courgettes)
Peel and finely chop onion.
Cut ends from zucchini. Grate coarsely (a food processor makes this easy).
In a large bowl, lightly beat eggs. Add salt and pepper to eggs if you wish. Add zucchini, oil, cheese, onion, and flour. Mix very well.
Pour into a greased cake tin or oven proof dish. Bake in a moderate oven for about 40 minutes until golden brown.
To serve cut into slices and serve warm.
What's left over is good eaten cold. You can take it on a picnic! This is an easy recipe that the kids could help make!
