1 10-oz. package frozen chopped spinach
Sauté onion, celery, and carrots in oil or margarine until tender. Cook and drain spinach. Combine vegetables. Add eggs, salt, pepper, and matzo meal.
Spoon into an 8" square pan. Bake about 45 minutes at 350°F. This recipe doubles very nicely.
