Potato-Zucchini Kugel II (P, TNT)

Serves: 12-14

5 large zucchinis, coarsely grated
2-3 potatoes, peeled and grated
2-3 onions, grated
1-2 large carrots, grated
1-1/2 to 2 cups flour
1 tsp. baking powder
3/4 cup water
1/2 cup oil
3 eggs, beaten
1 tbsp. chicken soup powder
salt and pepper to taste

Squeeze the excess moisture out of the grated vegetables.

Combine with the rest of the ingredients.

Pour into a sprayed glass pan (9"x13") and smooth out the top. Bake about 1 hour.

The zucchinis can be peeled or left with the peel on. I prefer to leave them unpeeled. It adds a bit of color to the kugel.

Poster's Notes:
My kids call this a "pashtikugel" (pashtida in Hebrew is kugel).
