1 medium zucchini
Grate unpeeled zucchini and onion in processor. Put in bowl.
Peel potatoes and keep in cold water until grated in processor. Place colander over another mixing bowl and run cold water over the grated potatoes. (This keeps the potatoes from turning black.)
When all is grated, pour the water from the mixing bowl. There will be a layer of potato starch on the bottom. Add the grated potatoes from the colander, the grated onions and zucchini. Mix well together, add the oil, salt, pepper and eggs.
Pour a little oil into a 9" square aluminum pan. Place in oven until oil is hot. Add kugel mixture and bake for at least 1 1/2 hours, or until top is brown.

I think the taste of the kugel depends very much on the quality of the potatoes, but for the last two weeks my kugel has been light and delicious.
