Potato Kugel w/Spinach and Cheese (D, KLP, TNT)

Serves: 6

1 garlic clove, crushed
15g butter
500g spinach, cooked and well drained
3 eggs beaten
500g smooth cottage cheese/cream cheese
125g cheddar cheese, grated
50g chives
1/2 tsp. nutmeg, grated
1-1/4 kg potatoes, peeled and very thinly sliced
salt and freshly ground black pepper

Preheat oven to 180°C /350°F.

Mix the garlic and butter together. Grease a 23cm springform cake tin. Beat eggs with the cream cheese. Add spinach and 2/3 of grated cheese. Add chives and nutmeg. Season.

Cover the base of tin with a layer of potatoes. Spread evenly with spinach mixture. Continue layering, finishing with a layer of potato. Sprinkle with remaining cheese.

Cover with foil/ aluminum. Cook for 1 and 1/2 hrs. until tender. Remove foil for last 15 minutes. Slice into wedges. Serve hot or cold.
