1-1/2 pounds sweet potatoes/yams
Heat oven to 375°F. In separate sauce pots, boil potatoes in salted water to cover for 20 minutes.
Drain. Cut into slices. Arrange in shallow baking dish greased with 1 tbsp. oil.
In skillet, cook onions and thyme in remaining oil until golden. Add sugar and cook 2 minutes more, cool slightly.
In bowl, combine eggs and onion mixture. Pour over potatoes, bake for 40 minutes.

4 onions, chopped
1 tsp. chopped thyme
1 tbsp. sugar
4 eggs, beaten
I don't like sweet potatoes (yams) myself, but this recipe from another Yahoo list might be good for those who do.
