Potato Kugel, Mashed (P, TNT)
Source: My mother
Serves: Depends how many potatoes are used

Regular potatoes (not new potatoes)
Salt
Pepper
Onions, chopped finely
Paprika
Canola oil

Boil potatoes. Drain very well, and mash until smooth.

Meanwhile, fry onions in oil, until nicely brown, but not burnt.

Add onions and remaining oil to the potatoes. Add salt and pepper to taste.

Put mixture into a casserole dish. Sprinkle paprika on top. Put several capfuls of oil over casserole. Don't drown the potatoes, but use enough so that it will brown.

Put in oven at 350°, and bake uncovered for one hour.

Poster's Notes:
This is the way my mother always made potato kugel, and so do I. To my mind it's much better than the usual kugels. The amounts aren't exact--you have to try several times to see what you and your family like.
