Potato Kugel, Low-Fat II (P, KLP, TNT)

Serves: 10 to 12

6 large Yukon Gold potatoes
2 onions, 1 large, 1 medium
8 egg whites
1 tbsp. oil
1/4 cup potato starch
1/2 cup boiling water

Preheat oven to 500°F.

In a bowl, mix egg whites and oil by hand.

In processor, grind coarsely in batches, the cubed potatoes and the onions. Add to egg mixture. Sprinkle potato starch over top (but do NOT mix). Pour boiling water over mixture and stir with a spoon.

Spray a glass 9"x13" baking dish with cooking spray, or brush with a little oil. Put dish in oven to heat up, until HOT. Parchment Paper may also be used, brushed with a little oil.

Put mixture into hot dish and bake for 20 minutes, uncovered. Turn down heat to 400°F and bake for 40 minutes more, uncovered.

Let stand to cool somewhat before removing from pan.
