1 3-ounce box potato pancake mix
Preheat oven to 375°F.
Beat the eggs. Add 1 cup cold water. Add contents of package. Add oil.
Grease pan. Pour batter in. Put light layer of oil on top. Bake 1 hour or until brown.
Double recipe if using a 6-ounce box of mix.
Poster's Notes:
As far as the number of people it would serve, if you use an 8"x8" or 9"x9", you would probably get 16 small portions depending on how you cut it. If you like larger portions, you could slice it in 1/3's and have 9 portions.

I haven't made this in ages but I know I used a rectangular Pyrex pan for it--I used at least 6 ounces of potato pancake mix, maybe even 9 ounces. Use your judgment--if you use 6 ounces and it doesn't seem like a lot of batter, use the 8"x8" Pyrex or 9"x9". One 3-ounce box alone would not make much of a kugel, so definitely use at least 6 ounces.
