Potato Kugel, Convenience I (P, KLP, TNT)

Serves: 12

1 box Passover stuffing mix
2 large packages frozen hash brown potatoes
1 large package frozen chopped onions (or 4 large fresh onions)
Vegetable oil for frying
1 lb. fresh mushrooms sliced (optional)
1 red pepper, green pepper or both, sliced (optional)

Preheat oven to 375°F.

Sauté potatoes, onions, mushrooms, and peppers until golden brown. Prepare stuffing mix as directed on package.

Place potatoes on the bottom of shallow roasting pan with mix on top. Sprinkle salt and pepper to taste. Bake for 1 hour at 375°F. May be baked in two 3-quart round casserole dishes. Use same time and temperature as above.
