1 pound matzo farfel/ferfel
Soak matzo in hot water; squeeze out and mash.
Add remaining ingredients and mix.
Grease 9"x13" pan and heat before putting mixture in pan.
Bake at 350°F until kugel is brown and crispy on top.

2 packages onion soup mix
8 eggs, beaten
2 teaspoons baking powder [if available for Passover]
1/2 cup oil
2 tablespoons oil for pan
This is a Passover potato kugel that is a bit different, but my family likes it. The only drawback is the amount of sodium.
