4 russet potatoes (they don't turn brown as fast)
Grate the potatoes and onions into a bowl. Add the egg, salt and pepper, and stir well. Add enough matzo meal to absorb most of the liquid.
Heat the oven to 350°F. Grease well a glass baking pan, and pour mixture into it. Bake for 45-60 minutes, until set, and edges are crispy.
Serve hot with applesauce.
