4 medium potatoes, pared and grated
Grate the potatoes and combine with milk to keep them from darkening. Thoroughly blend with eggs.
In a 10" ovenproof skillet, spray with Pam, sauté the onion until transparent. Blend in potato and egg mixture and seasonings. Bake uncovered in the skillet at 350°F for 1 hour. Serve with sour cream or applesauce.

2 cups milk or soy milk (not for Pesach)
4 eggs, beaten (or equivalent egg beaters)
1 medium onion, chopped
Vegetable cooking spray
Salt and pepper to taste
I changed the recipe by using pre-grated frozen potatoes, egg substitute, soy milk, and a finely chopped jalapeno. It was a low fat, spicy kugel. My family loved it. I have added jalapeno to my latkes for a change of pace too.
