Noodle Kugel, Onion I (P)
Serves: 10-12

3-5 medium onions, sliced in thin crescent shaped slices
1 lb. fine noodles
5 eggs
1/4 cup olive oil
2 tsp. salt
1/2 tsp. pepper
1-1/2 tsp. sugar

Sauté onions in olive oil until brown but not burned.

Cook noodles and drain.

Crack eggs (discarding yolks if you're watching cholesterol) in large bowl. Stir in onions, noodles, salt, pepper and sugar. (Adjust salt, pepper and sugar to taste.) Pour into 10"x10" square or comparably-sized dish.

Bake covered for about 1 hour at 350°F. Uncover toward end if you like a crispy top.
