Matzo Stuffing-Like Kugel (M/P, KLP, TNT)

8 matzo broken
3 cups broth
6 jumbo eggs, beaten
1-1/2 cups onion, sautéed
1/2 cup celery, sautéed
2 teaspoons poultry seasoning
2 teaspoons salt
1 teaspoon pepper
1-2 cups cut up chicken from the soup, optional

Preheat oven to 350°F.

Pour hot broth over broken matzo, allow matzo to absorb the broth. Add all the rest of ingredients and combine well.

Place 9"x13" pan in oven with a little oil to cover bottom until oil is HOT. Pour mixture into hot pan and bake for 1-1/2 hours.
