1 medium kumara/sweet potato/yam (you will need 1 cup mashed kumara)
Prick kumara, cover with plastic wrap, and microwave for 10 minutes, or until soft; cool slightly, peel and mash. Cool completely.
In a bowl, mix all dry ingredients. Add the ginger, raisins and sugar. (nut the peanuts.) Stir oil with the eggs, vanilla, juice and add the kumara. Add to the dry ingredients and mix until all is well blended.
Spoon mixture into greased 15 cm/25 cm loaf pan. (cover base with baking paper.) Sprinkle over with the peanuts. Bake in preheated 325°F hot oven for about 1 hour.
Stand loaf in pan for 15 minutes before turning onto wire rack to cool.

1 tablespoon chopped finely glazed ginger (optional)
3/4 cup raisins, (you can chop them)
1 cup sugar
1/2 cup oil
1 teaspoon vanilla essence
2 eggs, lightly beaten
1/4 cup orange juice
1/4 cup roasted unsalted peanuts, chopped
This recipe can be made 2 days ahead. Store in an airtight container and freeze very well.
