3 tbsp. margarine for the pan
Mix all and bake in a 3-quart casserole at 350°F for about 45 minutes.
For pancakes (which my Mom would serve on Passover instead of hamburgers, since there was never a meal on Passover without matzo and sweet butter with salt):
Heat an electric fry pan to 350°F, with a 1/4" of oil on the bottom. Drop batter by the quarter cup into hot oil carefully, and cook until bottom is firm. Turn, and cook second side until golden.
When I get these right, they don't need any condiments, they are moist and flavorful on their own.

1 chopped green pepper
1 cup chopped onions
1-1/2 cups grated carrots
1 small eggplant, cut into 1/2" cubes
10 oz. package frozen spinach
3 eggs
1-/2 tsp. salt
1/4 tsp. pepper
1-1/4 cups matzo meal
This is another of my Mom's recipes. For someone born before the first World War, she was pretty daring in her choices cooking. I guess some of it rubbed off.
